A HEALTHY START TO 2018 // CHICKEN QUINOA SALAD

 
Hello beauties, happy Tuesday! The new year recently began and I don’t know about you but for me, my New Years resolutions are super important. And I think we can all agree that the one most people always have as #1 is eating healthy. Fun fact: it’s proven that most Americans give up on their New Years resolutions by February. So that’s why I’m here today to show you another recipe that’s healthy and delicious that will make the process of completing the eating healthy resolution much easier. Because eating good doesn’t mean that your meals have to be boring.

And don’t think that it’s all about vegetables and greens because you can really spice it up and turn any lunch into a healthier option. For instance, how about learn some white quinoa recipes? Sounds yummy, right?! Well, meals with quinoa and chicken are healthy and tasty. I’m showing you today one of my all-time favorite recipes to make for dinner and any time of the day– a chicken quinoa salad! It might seem like there are a lot of steps but it’s super easy. You can also turn this dish into an on-the-go lunch by putting it in an air tight container. This is not only easy to make but you can also substitute any of these ingredients for other items that you might have at home. So let’s get into the recipe!

WHAT TO MAKE WITH QUINOA.

List of Ingredients below!

Baked Chicken:

• 2 boneless skinless chicken breasts

• garlic salt

• black pepper

• lime or lemon zest

• lime or lemon juice

• oregano

Process:

season your chicken breasts with the spices and ingredients above according to taste, both sides.

bake the chicken at 350°F (180°C) for 15-20 minutes or until done.

Quinoa Salad:

 2 cups, diced cucumbers

• 2 cups, cherry tomatoes

• 2 cups, cooked quinoa

• 1/2 cup, crumbled feta cheese

 rosemary

• black pepper

• cinnamon

 oregano

• salt

 2 tbsp, red wine vinegar

 3 tbsp, olive oil

Process:

Simply mix all of your ingredients together, give it a mix, and you’re done.

2018 llego, y no se tu pero para mi los propositos de año nuevo son super importantes y no el solo hecho de plantearlos, sino hacer todo lo que este a tu alcance para lograrlos. Estaras de acuerdo conmigo en que uno de los propositos que la mayoria de las personas tienen en su lista, ocupando los primeros lugares, es comer mas saludable para mejorar o mantener la figura. Un dato curioso es que esta comprobado que la mayoria deja a un lado su lista mas o menos en febrero. Asi que, estoy aquí, compartiendo otra receta que es rica y muy saludable y que te hará este proceso de comer saludable mas fácil. Es importante destacar que comer nutritivo no significa en lo mas mínimo que tus comidas deben ser aburridas. No es todo verduras y lechuga. Tu puedes facilmente condimentar y transformar cualquier comida en una opción mas sana. Esta ensalada con pollo es un claro ejemplo. Esta receta puedes modificarla y sustituir por ingredientes que tengas en casa. Chécala!  La lista de ingredientes te la doy a continuacion:

Pollo al horno:

• 2 pechugas de pollo sin hueso

• sal con ajo

• pimienta negra

• cascara de limon

• jugo de limon o lima

• oregano

Quinoa Salad:

•2 tazas de pepino en cubos o cuadritos

• 2 tazas de tomates cherry

• 2 tazas de quinoa cocida

• 1/2 taza de queso feta picado

 rosmarino

• pimienta negra

• canela

 oregano

• sal

 2 cucharaditas, vinagre

 3 cucharaditas de aceite de olivo
